Default Ideal Setup

Hi I have been offered a contract that starts late august only for a
couple of weeks, but I need to start to get used to Linux and Windows
2003. So what way would offer the best learning experiences, I have at
my disposal 1, P3 800 with 512 ram and two 10gb drives, One P2 laptop
with 10gb and 256 of ram 3, a P2 PC with a 5 gig hard drive and 128mb
of ram. I would like to keep the laptop as windows 2000 client so I
can use this a test client e:g joining the domain etc. At the moment
all PCs and laptop connects to the net through a Linksys 4 port cable
router model BEFSR41.
So how would you set up the two PCs I was thinking dual boot fist one
with 2003 and Linux each on there own drive? and the other PC just
Linux (red hat 6.1).
Also what versions of Linux would you use, recommended books etc

I got a feeling the client wants to bin the nt server he has got and
his considering 2003 server but wants to see if Linux can take its
place.

Users approx 15, each logon to a domain, each has got email via
exchange (another cost saver coming there) no database is run on the
servers its just acting like a file server.

Another point mentioned was Office 2000 again he thinking of upgrading
to Office 2003 but has heard there is a cheaper option out there could
this be open office as none of the PCs are running any special macros
etc its just basic office stuff.
Any other decent newsgroups I can subscribe to ???
