Default Time Zone Changed After Reboot

I had to reboot to install some hardware and it looks like somehow my
time zone got changed. The 'date' command now outputs in UTC and, as a
result, many of my applications are a few hours off (including Mozilla
Sunbird, which keeps my appointments). How can I change this? Where
in the startup would it have been changed? Thanks.
