Can someone please tell me which CPU settings I should use for
my 2.6.18 kernel for CPU configuration...

Intel Core 2 Duo Desktop Processor E6300

So far, I think your closest bet will be pentium-m, I've been using it like
that for 4 months and its been great

forgot to mention, remember to select SMP too, otherwise you'll only be
using one core.
